摘要
经过几十年的改革开放，中国经济得到了很大程度的发展，人民的生活水平也有
了显著的提高，生活节奏的加快使人们传统的生活习惯也发生了改变，对于速冻食品
的需求与日俱增。但是我国冷链运输的发展并没有跟上市场的需求。相比较传统的物
流研究，冷链物流作为特殊的物流方式，受到的重视程度还不够。不仅仅是理论研究
的缺乏，由于受到冷链物流先期投入资金大的影响，基础设施也不完善。滞后的冷链
运输制约着我国冷冻冷藏经济的进一步发展。与传统的常温物流不同，冷链物流是一
个完整的供应链体系，不仅受环境制约，还受企业等各方的影响。本文着重对冷链物
流运营系统进行探讨，分析冷链的特殊性，研究冷链发展的要素。因此，本文选取生
鲜食品质量管理，经营模式，配送管理这三个部分作为研究内容。

冷链物流区别于常温物流，运输的产品对储运环境要求严格，很容易造成产品变
质或腐烂，相对于常温物流质量管理更加重要。本文借助于关键控制点(HACCP)理
论，探讨在实际储运过程中质量的控制。

常温物流运输的运作模式已不能适应快速发展的冷链物流，通过研究先进的配送
中心的运作模式来探讨中国冷链物流发展模式。

With the development of China’s economy and the improvement of the people’s living
standard,the demand of the global frozen food is growing. Cold chain logistics of China
can’t adapt for the fresh food market development requiremets and give rise to the food
waste during the transportation. 30years of reform and opening up, compared with the
traditional logistics research, cold chain logistics as a special way of logistics was
neglected. With the booming of the economy and the remarkable improvemetn of people’s
living standard, it can’t suit the demand of increasing requirements of people for food. It
not only threat to food safety but also cause huge economic loss. Cold chain logistics is a
complex system which has both general logistic characteristic and particularity of
refrigerated logistics. It has multiple interrelated factors which restrict each other. This
paper focuses on the cold chain logistics operation system which is studied in the
particularity view. Therefore, the article selects the fresh food quality management,
inventory management, distribution management for research.
Because the cold chain logistics deliver the fresh food,quality management is
especially important. The paper studies the critical control points(HACCP) in the actual
application and research the cold chain logistics quality assurance system.
