摘 要
改革开放以来,中国经济的快速发展、居民的财富不断增长以及生活水平的持续提
高,使得人们的日常饮食逐步由“吃的饱”向“吃的好”进行转变,具有健康、安全、
卫生、快捷等特点的生鲜面越来越受到广大消费者的青睐,而生鲜面的流通需要通过冷
链物流配送来提供支持。有研究表明国内生鲜食品存在物流配送成本较高,流通环节损
失、浪费较多的现象,基于此背景,借助精益物流思想,为和晟和面业公司设计出符合
精益化物流方案,帮助企业实现降本增效的目标,对生鲜食品的物流配送领域有一定的
借鉴参考意义。
本文通过对国内外精益物流、冷链物流、路径规划的研究进行总结,学习生鲜面、
物流系统、物流配送相关概念和理论以及Flexsim仿真软件等有关知识,按照“需求分
析—方案设计—方案实施”的思路设计物流方案。首先,深入分析郑州市生鲜面现状,
以及和晟和面业市场需求、物流系统需求,为后期企业选址、车间物流配置和生鲜面的
配送打下基础;其次,运用层次分析法来确定影响公司选址各指标因素的权重,并通过
一致性检验,而后依据专家打分计算出最佳选址方案;再次,设计原辅料采购入库物流
流程、车间加工物流流程,运用Flexsim仿真软件对车间物流规划进行建模仿真;最后,
结合企业发展愿景和规划,以精益物流思想为核心,从配送方案目标、原则,配送模式,
配送物流运输模式,配送物流流程,配送方法等几个方面为和晟和面业公司规划设计了
物流方案,同时,从塑造精益企业文化、完善信息化建设、培养精益化物流人才、优化
配送车辆和路径、建立共识整体风险管理体系等五个方面提出配送方案保障措施。
结果表明:基于精益物流思想为核心的物流方案,能够帮助企业降低物流配送成本,
提高配送效率,也能够确保生鲜面在配送过程中的食品安全,提升客户满意度,同时,
本文的研究也为生鲜食品物流方案的规划设计实施提供了借鉴参考意义。

Abstract
Since the reform and opening up, the rapid development of China's economy, the
continuous growth of residents' wealth and the improvement of living standards have
gradually changed people's daily diet from "full" to "well". Fresh noodles with health, safety,
sanitation, quickness and other characteristics are more and more favored by consumers, and
the circulation of fresh noodles needs to be supported by cold chain logistics distribution,
some studies have shown that domestic fresh food has the phenomenon of high logistics
distribution cost and more loss and waste in circulation links. Based on this background, with
the help of lean logistics ideas, we design a lean logistics scheme for Heshenghe Noodle Co.,
Ltd. to help enterprises achieving the goal of cost reduction and efficiency increase, which has
certain reference significance for the logistics distribution of fresh food.
This paper summarizes the domestic and foreign researches on lean logistics, cold chain
logistics and path planning, learns the theories related to fresh noodles, logistics system and
logistics distribution as well as the relevant application method of Flexsim simulation
software, and designs the logistics scheme according to the idea of "demand analysis - scheme
design - scheme implementation". First of all, an in-depth analysis of the current situation of
fresh noodles in Zhengzhou city, as well as the market demand and logistics system demand
of Heshenghe Noodle Co., Ltd, lays a foundation for enterprise site selection, workshop
logistics configuration and fresh noodles distribution in the later stage. Secondly, the analytic
hierarchy process is used to determine the weight of each index factors affecting the site
selection of the company, and pass the consistency test, calculate the best location scheme
depend on the expert scores. Thirdly, the logistics process of raw and auxiliary material
procurement and warehousing logistics process and workshop processing are designed, and
the workshop logistics planning is modeled and simulated by Flexsim. Finally, combined with
the enterprise development vision and planning, taking the lean logistics idea as the core, the
logistics scheme is optimized and designed for Heshenghe Noodle Co., Ltd. from the aspects
of target principle, distribution mode, distribution logistics transportation mode, distribution
logistics process and distribution method of the distribution scheme. Simultaneously, the
guarantee methods for distribution scheme are proposed from five aspects such as shaping
lean enterprise culture, improving information construction, cultivating lean logistics talents,
