摘要
科学的发展使得各种各样的化学物品、添加剂不断涌现,随着食品生产加工、
销售中肆意掺假造假、有害污染等引起的侵害人民生命健康的事件频发,更使食品
质量安全发展成为了影响社会进步和人体健康的重大问题,成为全球广泛关注的重
要问题。安全性作为食品的基本属性,同食品的生产、经营方式及质量管理密切相
关,人们生活水平的日益提高和自我保护意识日益增强的今天,人们对食品质量的
安全要求越来越高,因此,如何迅速建立起科学合理、行之有效的食品安全管理体
系已成为各国学者研究的热点。本文以秦皇岛正大有限公司为研究对象,旨在通过
科学的方法,完善该公司的食品质量安全管理体系,从而达到帮助企业在鸡肉制品
行业中获得全面的竞争优势等目的

首先本文系统阐述了研究背景和意义,梳理了国内外研究现状,并指出当前研
究的不足,同时概述了食品质量相关理论等,奠定了论文的研究基础;
其次,对秦皇岛正大有限公司进行了阐述,对该公司的食品质量安全管理进行
的详细的分析,通过分析得出该公司在质量目标不够细化、职工缺乏培训、激励制
度不健全和产品质量合格率无法稳定提高等三个方面存在食品质量安全管理问题;
再次,通过 PDCA 循环法对秦皇岛正大有限公司食品质量安全体系进行优化,
使优化后的食品质量安全管理体系更加具有科学性和可行性

最后,从建立食品质量安全文化、完善人力与保障制度和建立质量监控考核体
系等三个方面提出了保障秦皇岛正大有限公司食品质量安全管理体系顺利实施的保
障措施

Abstract
The development of science makes the emergence of a variety of chemicals,
additives, food production and processing and sales with the wanton adulteration and
harmful pollution caused harm to people&39;s life and health security incidents, more make
the development of food quality has become the major problems affecting social progress
and human health, has become an important issue of global concern. As the basic
properties of food safety, production, management and quality management with food is
closely related to the improvement of the living standard and self protection awareness
growing today, people on food quality and safety requirements more and more high,
therefore, how to quickly establish a scientific and effective food safety management
system has become a research hotspot. This paper takes Qinhuangdao Zhengda Co. Ltd
as the research object, through scientific methods, improve the food quality and safety
management system of the company, so as to help the enterprise to obtain the
comprehensive competitive advantage in the industry to chicken products.
First of all, this paper describes the background and significance of the research,
reviews the research status at home and abroad, and points out the shortcomings of the
current research;
Secondly, the Qinhuangdao Zhengda limited company is discussed, detailed analysis
of food quality and safety management of the company, through the analysis of the
company in the quality objectives are not refined, lack of training, staff incentive system
is not perfect and the qualification rate of product quality can not improve the stability of
three aspects of food quality safety management;
Again, the food quality and safety system of Qinhuangdao Zhengda limited
company is optimized by PDCA method, using the AHP to determine the food quality
and safety management, and Optimization in the implementation of the project;
Finally, the security measures to protect the Qinhuangdao Zhengda limited company
of food quality and safety management system for the smooth implementation of the
